How can a meal be served without a table? There is counter seating on the first floor and a private dining room on the second. Was there some hidden arrangement I had missed?

The restaurant occupies a little two-storey house within Tang Xiang Cultural Space on Xikang Road, Shanghai. Each floor offers a different way to dine. Obscura, on the ground floor, serves contemporary Chinese cuisine at the counter; Chef George Zhang has led its kitchen since last year. Upstairs is a single private dining room: his “Chef No Table.” Its defining feature is how close it sits to the kitchen, quite literally a few steps away. At the top of the stairs, a discreet door opens into the kitchen; turn around, and you are in the dining room. Dishes arrive straight from the wok, their fragrance still rising as they reach the table.

@Jocelyn華姐's TastyTrip YouTube

Chef George says he wants to cook more dishes with wok hei here: food sent to the table as soon as it is ready, so guests can eat at their own pace without pausing for an explanation after every course.
After the meal, my takeaway was simple: eat it while it’s hot.

Chef George Zhang

First, of course, came a few palate-opening cold dishes. The first paired sweet bamboo shoots with geoduck in a gentle Sichuan peppercorn dressing. Chilled seasonal shoots formed a crisp, sweet base for the tender clam. The peppercorn was restrained: first came the natural sweetness of the bamboo shoots and geoduck, then a slow, delicate tingle. It was a lovely start, and left me eager to try the rest.

Sweet Bamboo Shoots with Geoduck

The marinated bamboo prawns with young ginger and pickled chilli made a bolder impression. The chillies brought sour heat, the ginger a fresh fragrance, while the prawns had a barely set, custardy texture at the centre. Strands of green mango from Xishuangbanna added a fruity acidity distinct from that of the pickled chillies. The “strange-flavour” cold fried yellow croaker used the Sichuan technique of shallow-frying in a light batter: crisp on the outside, tender within. For the young mud crab with Moutai and litsea, the aroma of the spirit infused the crab from Taishan, Guangdong, while litsea added a bright, citrusy note. The Moutai and the crab’s sweetness came through in equal measure. By the end of these starters, my palate had travelled widely, yet I was ready for more.

Marinated Bamboo Prawns with Ginger and Pickled Chilli

Young Mud Crab with Moutai and Litsea

Next came a double-boiled soup of duck, beef and seahorse. Three-year-old duck and beef had simmered together into a clear broth with surprising depth. Seahorse was the ingredient that intrigued me most; it appears in some traditional Cantonese tonic soups. What stood out in this bowl was George’s idea of “light yet flavourful”: clear in appearance, rich in taste, and warming as it went down.

Once the hot dishes arrived, the table grew lively. The dry-braised Qiandao Lake fish head showed the technique at its best: the sauce reduced until its flavour clung to the ingredients, leaving a glossy sheen but no pool of liquid. The head was rich in collagen, yet the flesh remained delicate. A gentle nudge with the chopsticks released a tender piece; after each bite, I found myself searching for the next. It was the sort of dish that left little room for conversation.
The sea snail braised with fish-fragrant sauce and fermented tofu also suited me perfectly. Dalian sea snails were simmered in fish stock, then braised with a Sichuan-style fish-fragrant sauce made with pickled chillies and fermented tofu. The snails were springy; the tofu had absorbed the sauce, while its fermented aroma remained gentle. Fish-fragrant is a familiar Sichuan flavour profile, but here it gave these two ingredients a fresh character. One was chewy, the other soft and yielding; the same sauce tasted different with each.

Sea Snail Braised with Fish-fragrant Sauce and Fermented Tofu

The next few seafood dishes made clear how much attention Chef George pays to texture.

The pan-fried sea cucumber with razor clam meat was seared and lightly fried: faintly crisp outside, soft and glutinous within. Sea cucumber is mild by nature, so seasoning it well while preserving that tender texture takes skill. Razor clam meat with Thai basil is a familiar pairing in Chaoshan cooking. Small and briny, the clam meat brought a clean savouriness; the basil added a fresh herbal lift. Together, they gave the sea cucumber flavour without weighing it down.

Pan-fried Sea Cucumber with Razor Clam Meat

The dry-braised Australian abalone with yellow wine was substantial and springy, its wine aroma unfolding with each chew. Stir-fried fish maw with matsutake and crab was softer and silkier: sweet crab, gelatinous fish maw and hand-torn matsutake underneath. A little matsutake with each bite added an earthy fragrance and a tender, slightly crisp contrast.

Dry-braised Australian Abalone with Yellow Wine

The dish I remember most from that evening was the stir-fried beef with sand leek.

Chef George took care to point out how rare this cut is. The beef had just enough fat to make it tender and silky, while retaining a satisfying chew. Sand leek, tossed over high heat, brought its pungent aroma together with the savoury meat. It arrived piping hot. This was the dish that made the kitchen’s proximity feel essential. A stir-fry is at its most fragrant straight from the wok, when the meat is still perfectly tender; even a short delay feels like a shame. Chef George placed the kitchen nearby and spared guests a running commentary so they could enjoy each bite at its peak. We reached for this dish more often than the others, and the plate was empty in no time.

Stir-fried Beef with Sand Leek

A dish’s journey from stove to table, I realised, is part of what makes it delicious.

Crispy fried sardines with chilli and house-made pepper salt used the belly and tail, delivering savoury heat that called for a drink. The sugarcane-smoked pigeon was infused with spices, pine needles and sugarcane, its aroma reminiscent of tea-smoked duck. The skin was taut; the meat released its juices with each bite. The smoke never overpowered the bird, and the cooking was deftly judged.

Fried Sardines with Chilli

Sichuan peppercorn, “strange flavour” and fish-fragrant sauce; searing, frying, braising and stir-frying: these are familiar flavours and techniques in Chinese cooking. Chef George applies them to a range of ingredients while keeping the diners’ comfort in mind. The food should be hot, the flavours varied, and lighter, fresher notes should follow richer ones. At the height of the meal, conversation fell away for a moment as everyone bent over their plates. No one seemed to mind.

The meal ended with rice stir-fried with ganba mushrooms. The chef invited us to take our bowls and chopsticks to the kitchen and wait for it there. The wok was still on the burner, and the mushrooms were fragrant before the rice was even served. As soon as it came off the heat, it was spooned into our bowls. There was hardly a pause between wok and first bite. I had thought I was full, but standing by the stove, I found room for a little more. It felt like waiting for dinner at home.

Rice stir-fried with Ganba Mushrooms

What I felt that night was how close the kitchen was: as soon as the wok’s roar subsided, the hot dishes were on the table, while the chef himself remained almost invisible. I liked the ease this gave us, the chance to sit with our companions and enjoy a proper, hot meal.
Perhaps I had been too intent on finding an explanation in the name. “Chef No Table” does not mean there are no tables. It may simply mean the chef need not remain at the table to explain every dish, leaving everyone free to enjoy the meal.

What stays with me most is still those first few bites of food straight from the wok, and the moment we carried our bowls to the kitchen to wait for the rice. Thinking of that final bowl of ganba mushroom rice, I wish I had eaten just a little more.

Cover Picture：Ye Shi

Photos：Ye Shi

Author：Lia
